skinny taquitos delight

Five years ago, the only thing I could literally make were sandwiches and maybe some fried chicken...but marriage forced me to start to cook :). And five years later, I can say that I am not that bad when it comes to cooking :). While it's still not my favorite thing to do, but at least I don't hate it anymore :). So, inspired by two people, my mom, who I think makes the fanciest dishes in the world :) and my girlfriend, who literally taught me everything in the kitchen and had to answer maybe some of the most ridiculous questions starting with how to make chicken noodle soup...:), I started two cook and even bake. Some of the recipes I make are theirs, with just a little twist from me, such as taquitos which I ate for the first time at my girlfriend's. Since, I love Mexican food I fell in love with them and made my skinny version.

3 large chicken breasts
1 cup low- fat mexican cheese
1/3 cup non-fat greek yogurt ( original sour cream)
1/2 cup taco sauce
1 pack of taco seasoning mix
tortillas ( I use whole wheat ones )

Mix chicken breasts with taco seasoning mix and fry. Shred fried chicken and mix with cheese, yogurt, taco sauce and chopped cilantro. Fill tortillas and roll them. Bake at 350 F (180 C) for about 10 - 15 minutes.
I usually serve them with homemade guacamole ( two avocados, small tomato, a little onion and chopped cilantro- mix everything and garnish with salt and lime).
